From your thumbnails, I think the one that works best would be using their coat of arms and their simple flag design. Maybe the cross of the flag could substitute the "t" in Scotland and have the whole word at that angle...?
Scotland is interesting place to place the olympics. However try to simplify the bag pipe idea. It could be an interesting element for the over all idea of the logo. The last set is good feel of playful and fun, which could be theme that olympic logo can represent scotland. Or use element from the olympic games like the javelin to make it look like a bag pipe.
I really like the one with the coat of arms. It really symbolizes Scotland's heritage and art. But I wouldn't have the 2012 curve at all because it begins to create an eyeball shape. Place the year however numbers are usually placed on coat of arms. Also, it should be 2016.
I think the one that is literally in box works the best. Its the most abstract and simple one. Everything else is a bit to complicated. It's not working so well in the box though. I think the box is unnecessary so it can be removed. Also, you don't want to use the figure skater because it idolizes that certain sport so it seems like the whole olympics isn't as important as figure skating.
I think the strongest idea is the bagpipe logo because it's visually interesting, it's an icon that represents the Scotland, and it's interacting with the type. I think the bagpipes are too complex though, too much detail. Try to simplify it, you could probably also make each pipe a different olympic color.
I also like the logo enclosed in a box, with a sort of kilt pattern shooting out under Scotland. Those ray shapes give it a dynamic feel and speed. Of you were going for a kilt though I think it needs to be defined better.

The typography will be the most prominent element in that logo, so a strong typeface that conveys the character of Scotland is essential.
